Surprise your family with this southwest inspired recipe!
1 beaten egg

¼ cup crushed nacho-flavored or plain tortilla chips (1 ounce)

3 tablespoons finely chopped green pepper

¾ teaspoon chili powder

¼ teaspoon salt

¼ teaspoon pepper

1 pound ground raw chicken or turkey

1 medium avocado, halved, seeded, peeled, and sliced

4 ounces sliced Monterey Jack cheese with jalapeño peppers

4 Kaiser rolls or hamburger buns, split

Lettuce leaves

  • Combine egg, tortilla chips, green pepper, chili powder, salt, and pepper in a medium mixing bowl. Add ground chicken and mix well. Shape into four ¾-inch thick patties.
  • Grill patties on the rack of an uncovered grill directly over medium-hot coals for 15 to 18 minutes or until no longer pink, turning once halfway through grilling time. Top each patty with avocado slices and cheese. Grill 1 to 2 minutes more or until cheese is melted. Toast rolls or buns on the grill if desired.
  • To serve, place one lettuce leaf on bottom half of each bun. Top cooked burgers and salsa. Makes 4 servings.
